My friend Annika gave me this recipe ages ago and it’s a very healthy soup for a cold day like today (no salt, no fat, like a detox). To eat with any of my bread recipes…Or with kale and walnut pesto.
2 cans 400g diced tomato
1 onion, chopped
2 cloves garlic, crushed
pinch dry chilli flakes
2 carrots, chopped
2 sticks celery, chopped
1 or 2 zucchinis, chopped
4 cups (1 litre) vegetable stock
Method:
- Put everything in a big pot and cook over medium heat until all the vegetables are soft.
- Blend the soup.
- Eat!
Super easy! You can serve it with Greek yogurt or sour cream.
